Preparation
Check by small stones grains. Place them in a saucepan and cover with cold water; soak overnight. The beans and drain them to the pot. Cover with 3 inches of cold water and boil for 1 hour, 45 minutes, or until tender.
While the beans cook, cook bacon until lightly browned in a saucepan over medium heat. Add the ham and garlic; saute for 2 minutes. Add the tomatoes, ketchup, mustard, pepper, chili powder, chipotle, sugar, salt and water.
Bring to a boil, reduce heat to low and cook for 30 minutes. Reserve.
When beans are ready; Drain, but reserve a cup of the cooking liquid. Coffee beans and liquid back into the pan and stir in the sauce. Simmer for 30 minutes. Serve hot with grilled tri-tip Santa Maria.
