The first step in the preparation of the pot is probably the most important. Browning beef increases not only color, but it's what gives the stew its deep flavor.
Start with 2 to 3 pounds beef chuck, cut into 2-inch cubes. Heat 3 tablespoons of vegetable oil in a large saucepan over medium heat until hot light. Pat the meat dry and season more salt and pepper.
