Stuffed peppers recipe; John & # 039

Preparation
Add the olive oil in a skillet and brown onion with a pinch of salt over medium heat. Remove and reserve half for the filling. The remaining sauce ingredients and bring to a boil. The sauce in the bottom of a large, deep pot.

Add all the ingredients for the filling in a bowl with the reserved onions and stir with a fork or your fingertips until mixture is combined. Tip: You can cook a little piece of padding test the seasoning.

Preheat oven to 375 degrees F.

The peppers in half lengthwise. Remove with a spoon the stems, seeds and white membranes of each pepper. Place the peppers in the pan, and fill each pepper with filling. A few extra cheese grated on top, if desired.

Cover with foil and bake for 45 minutes. Remove foil and bake for 20-30 minutes or until peppers are tender uncovered. Exact cooking time depends on the size, shape and thickness of the peppers. Better let stand 10 minutes before serving. Spoon sauce over.
