This recipe-French is a distant cousin in a dish called Italian veal francese jumped Vitello used as in France sauce used. The recipe came to New York with the first wave of Italian-American immigrants, and became known as the "French calf." Finally the recipe to Rochester, great Italian-American community emigrated to New York, where the chicken is replaced by the more expensive calf.
