Caramelized onions and garlic keeps the chicken ...

Preparation

1 tablespoon olive oil in a large skillet over medium heat. Add onion and garlic. Cook, stirring for 10 minutes or until tender. Add sugar and vinegar and cook for 6-7 minutes. Remove from heat.

Preheat oven to 425 degrees F. Oil a baking dish with 1 tablespoon of olive oil. Show Chicken, give bone side down in the dish, season with salt and pepper, and spread the onion mixture over the chicken.

Bake for 20-25 minutes or until internal temperature of 170 degrees F. Cover with foil if the onions too dark towards the end of cooking time. Let stand 5 minutes before serving
