How Braised Veal

4 carrots, peeled, cut into 1-inch slices; 2 stalks celery, cut into 1-inch slices; and 3 large russet potatoes, peeled and cut into eighths. Cover and simmer for 30-60 minutes or soft covered until meat and vegetables. Try and taste.
