Preparation
1. In a large saucepan, bring water to a boil. Add the carrots and beets. Reduce heat to simmer for about 20 minutes, or until the vegetables are soft. Strain the liquid into a small bowl.
2. In the same pan, melt the butter with ginger over medium heat.
3. Place the vegetables in a large bowl and with a mask potato or a large spoon, mash the vegetables until almost smooth, scraping down sides of bowl as needed. Add the butter mixture and season with salt and pepper and stir until blended. Scrape pour the mixture into a bowl and sprinkle with parsley.
