Preparation
1. Add the olive oil in a pan and brown onions with a pinch of salt over medium heat. Remove half and reserve for filling. Add remaining ingredients and bring to a boil sauce. Pour. The sauce in the bottom of a large, deep pot
2. Add all the ingredients for the filling in a bowl with the reserved onions, and stir with a fork or your fingertips, combining to blend.
Tip: You can use a small piece of shapes, cook test the seasoning.

4. Cut the peppers in half lengthwise. Remove with a spoon stalks, seeds and white membranes of each pepper. Place the peppers in a pan, and fill each pepper with filling. Some extra cheese may scraped up, if desired.
5. Cover with foil and bake for 45 minutes. Remove foil and bake uncovered for 20-30 minutes or until peppers are very tender. Proper cooking time depends on the size, shape and thickness of the peppers. It is best to stand for 10 minutes before serving to let. Serve with spoon on sauce.
